Instructions

  1. Start by seasoning the tilapia fillets with salt and pepper, ensuring they are evenly coated.

  2. Dust the seasoned fillets with 1/3 cup of flour, ensuring they are lightly coated on all sides.

  3. In a separate bowl, mix together the egg and buttermilk until well combined.

  4. In another bowl, combine the remaining flour, yellow cornmeal, salt, baking soda, baking powder, and Old Bay seasoning.

  5. Dip each floured fish fillet into the egg and buttermilk mixture, ensuring they are fully coated.

  6. Then, dip the coated fillets into the flour mixture, ensuring they are evenly coated with the breading.

  7. Heat the canola oil in a large pan over medium-high heat.

  8. Once the oil is hot, carefully add the breaded fish fillets to the pan, working in batches if necessary to avoid overcrowding.

  9. Fry the fillets for about 2 minutes on each side, or until they are golden brown and crispy.

  10. Once cooked, remove the tilapia fillets from the pan and place them on a paper towel-lined plate to drain any excess oil.

  11. Immediately season the fried tilapia with additional salt to taste.

  12. Repeat the frying process with any remaining fish fillets, ensuring the oil is hot before adding each batch.

  13. Serve the crispy tilapia hot, accompanied by tartar sauce or your favorite dipping sauce.

  14. Enjoy your crispy tilapia as a delicious main dish or as a snack!
