Ingredients:

  • 2 onions
  • 2 green capsicum (bell peppers)
  • 250g baby corn
  • 4 tomatoes
  • 2 tablespoons vinegar
  • Salt to taste
  • Sugar
  • 2 teaspoons red chili powder
  • 1 tablespoon tomato sauce
  • 2 tablespoons Worcestershire sauce
  • 3 garlic flakes
  • Water
  • 3/4 teaspoon cornflour
  • 1 1/2 teaspoons white pepper powder

Instructions:

  1. Peel and dice the onions into 1-inch squares. Soak them in water for 1 hour.
  2. Dice the capsicum into squares.
  3. Cut the baby corn into 2-inch long pieces diagonally.
  4. Grind 3/4 of the tomatoes to a smooth paste. Strain to remove the seeds.
  5. Remove the skin from the remaining tomato and dice it into 1-inch squares.
  6. In a medium-sized bowl, mix together the tomato paste, vinegar, salt, tomato sauce, Worcestershire sauce, and white pepper.
  7. Heat oil in a wok. Add sugar to the oil and let it caramelize without disturbing it.
  8. Squeeze the water out of the onions and add them to the caramelized sugar. Fry until golden brown on medium-high flame.
  9. Add minced garlic and red chili powder. Mix well and continue frying for 2-3 minutes.
  10. Add capsicum and aji-no-motto (optional seasoning) and stir-fry on high flame for 2 minutes.
  11. Next, add the baby corn and stir-fry for an additional 3 minutes.
  12. Mix in the diced tomato pieces and the ground tomato paste. Stir-fry for another minute.
  13. In a cup, mix cornflour with cold water to form a slurry. Pour it over the vegetables.
  14. Gently mix and cook until the gravy thickens.
  15. Serve hot with fried rice or noodles.
