🥞 Peasant Pancakes Recipe

Preparation Time: 20 minutes
Cooking Time: 15 minutes
Total Time: 35 minutes
Servings: 16-18 pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon cayenne
  • 1 scallion, finely chopped
  • 1 water chestnut, finely chopped
  • 1 cup raw shrimp, diced
  • 1/2 tablespoon Chinese red vinegar
  • 1/2 tablespoon cider vinegar
  • 1/2 tablespoon dark soy sauce
  • 1 tablespoon fresh ginger, minced
  • Chinese sausages (optional)*

Instructions:

  1. Prepare the Ingredients: If using Chinese sausages, slice them thinly. For those unfamiliar with this ingredient, it can be found in most Asian markets and adds a unique flavor to the pancakes. If unavailable, ground pork can be used as an alternative, or omitted entirely for a vegetarian-friendly version.

  2. Combine Dry Ingredients: In a mixing bowl, combine the all-purpose flour, salt, baking powder, white pepper, and cayenne. Stir until well incorporated.

  3. Create the Batter: Gradually add enough stock to the dry ingredients to form a batter slightly thinner than traditional pancake batter. The stock adds depth of flavor and helps achieve the desired texture.

  4. Incorporate Remaining Ingredients: Stir in the chopped scallion, water chestnut, diced shrimp, Chinese red vinegar, cider vinegar, dark soy sauce, and minced ginger. Mix until all ingredients are evenly distributed throughout the batter.

  5. Refrigerate the Batter: Cover the bowl and refrigerate the batter until ready to use. This allows the flavors to meld and intensify, enhancing the overall taste of the pancakes.

  6. Heat the Skillet: Use a heavy skillet, such as cast iron or Calphalon, if available. Heat the skillet over medium-high heat until very hot. Adjust the flame to maintain even cooking without burning the pancakes.

  7. Cook the Pancakes: Add enough oil to coat the bottom of the skillet. Once hot, ladle approximately 2 tablespoons of batter for each pancake into the skillet. Cook until the bottom is brown and crispy, then carefully flip to cook the other side.

  8. Adjust Batter Consistency: As you cook the pancakes, the unused portion of the batter may thicken. Simply add a little more stock as needed to maintain the desired consistency.

  9. Serve and Enjoy: Once cooked, transfer the pancakes to a plate lined with paper towels to blot excess oil. Serve hot, accompanied by your choice of dipping sauces. Be prepared to make plenty, as they are sure to disappear quickly!

These Peasant Pancakes are a true testament to the magic of Chinese cuisine, with each bite delivering a burst of flavor and a satisfying crunch. Whether enjoyed as an appetizer, snack, or part of a larger meal, they are guaranteed to leave a lasting impression on all who taste them. So, roll up your sleeves, gather your ingredients, and embark on a culinary journey that promises to delight and inspire.
