Deliciously Simple Chicken Pot Pie
Description: This is my DH’s favorite recipe, and I love it because it’s so simple to make! This is especially good on a cold night after a long day at work when you want some warm comfort food but don’t have the time or energy to put a lot into preparation. I wasn’t happy with the consistency of the filling, so I played around with the recipe a few times. I think I’ve finally got it just how I like it and have edited the recipe to reflect the changes.

Ingredients:
- 1 pie crust (allow to sit at room temperature for 15-20 minutes)
- 1 cup cooked white meat chicken, diced
- 1 cup milk
- 1 can cream of chicken soup
- 2 cups mixed vegetables (frozen or fresh)
- 1/4 teaspoon black pepper
Instructions:
Step | Instruction |

1 | Allow pie crusts to sit at room temperature for 15-20 minutes. Alternatively, microwave on defrost for 1 minute. |
2 | Preheat oven to 350°F (175°C). |
3 | Place bottom pie crust in an 8-9″ pie pan. |
4 | In a mixing bowl, stir together the diced chicken, mixed vegetables, cream of chicken soup, milk, and black pepper until well mixed. |
5 | Spread the chicken and vegetable mixture evenly into the pie shell. |
6 | Cover the filling with the top pie crust. You can flute the edges or pinch together with a fork to connect the top and bottom crusts. |
7 | Poke a small hole in the center of the top crust and make four 1/2″ slits, evenly spaced, to allow steam to escape during baking. |
8 | Bake at 350°F (175°C) for 30 minutes or until the crust is golden brown and the filling is warmed through. |
9 | Lower the oven temperature to 325°F (160°C) and bake for an additional 15 minutes. |
