Crown Roast of Pork and Stuffing

Description
An eye and taste pleaser for any special occasion. It looks so impressive wearing the little socks – take time to make them or buy the ready made. The stuffing compliments the pork flavor. You may make the socks out of foil or colored tissue paper.
Ingredients
- 7 lbs pork crown roast
- 1/2 tsp Worcestershire sauce
- 1/2 tsp garlic powder
- 1/2 cup margarine
- 1 onion
- 6 stalks celery
- 1 apple
- 1 tsp poultry seasoning
- 1 tbsp parsley flakes
- Salt and pepper, to taste
- 1 cup apple juice (plus more if needed)
- Colored tissue paper or foil for “socks”
Instructions

Prepare the Roast:
- Combine the salt, pepper, garlic, and Worcestershire sauce, and rub it into the roast.
- Place the roast flat in a roaster with the bone ends down and roast covered for 2 hours in a 325°F oven.

Prepare the Stuffing:
- Meanwhile, prepare the stuffing by sautéing the onion and celery in the margarine until the onions are translucent, then pour them into a large mixing bowl.
- Add breadcrumbs, diced apples, poultry seasoning, parsley flakes, and 1 cup of apple juice. Season with salt and pepper.
- Adjust the consistency by adding more juice if needed. The stuffing should be moist enough to hold together when squeezed lightly.

Stuff and Roast:
- After roasting the meat for 2 hours, remove it from the oven.
- Turn the roast so the rib ends are pointing out when you stand it on edge. Secure any joining ribs with a bit of wire.
- Place a sleeve of tin foil in the center of the roast, making sure it’s large enough to cover the stuffing by folding it over when filled.
- Fill the sleeve with the prepared stuffing, then fold the foil over it.
- Return the roast to the oven, uncovered, until the internal temperature reaches 170°F, approximately 1 1/2 hours.

Decoration:
- Once cooked, decorate the rib ends with colorful “socks” made from colored tissue paper or foil. Choose colors to match the season or holiday.

Additional Tip:
- If you have leftover stuffing after filling the roast, place it in a lightly greased casserole dish and bake it in the oven during the last 1 1/2 hours of roasting time.
