Ingredients:
- 1/4 cup butter
- 1/3 cup margarine
- 1 1/2 cups all-purpose flour
- 6 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon pepper
- 6 tablespoons cream of tartar
- 1/2 cup fresh parsley, chopped
- 1 1/2 cups green onions, finely chopped
- 1/2 cup curry powder
- 1/4 teaspoon salt
- 2 dashes cayenne pepper
- 2 eggs, separated
- 2 tablespoons mayonnaise
Instructions:
- Lightly grease a 15 x 10-inch jelly-roll pan or baking sheet with an edge.
- Line the pan with parchment paper or foil, shiny side up. Coat generously with butter or margarine and lightly flour it.
- For the Roulade:
- In a medium saucepan over medium heat, melt the butter or margarine.
- Stir in the flour and cook for 1 minute.
- Add the milk and cook, stirring until the mixture comes to a boil. Simmer for 2 minutes, then remove from heat.
- Beat the egg yolks, adding a few tablespoons of the hot sauce, then beat the egg yolk mixture into the sauce.
- Season with salt, nutmeg, and pepper. Pour the mixture into a medium bowl and allow it to cool slightly.
- Beat the egg whites with cream of tartar until stiff but not dry. Gently fold them into the sauce.
- Spread the mixture evenly in the prepared pan.
- Bake in a preheated 375°F oven for 15 to 20 minutes or until golden and the top feels firm.
- Let it stand for 5 minutes, then invert the roulade onto a clean tea towel. Carefully peel off the paper in strips and allow it to cool completely.
- Cut the roulade crosswise in half to make 2 rectangles, each 10 inches wide.
- For the Filling:
- In a bowl, combine all filling ingredients until well mixed.
- Spread the filling evenly over both rectangles of the roulade.
- Starting with a 10-inch side, roll up both rectangles tightly.
- Wrap each roll separately with plastic film and refrigerate for at least 1 hour. (These can also be prepared up to 2 days ahead.)
- Once chilled, unwrap the rolls and slice them into 1/2-inch slices.
