Ingredients:

  • 1/4 cup butter
  • 1/3 cup margarine
  • 1 1/2 cups all-purpose flour
  • 6 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon pepper
  • 6 tablespoons cream of tartar
  • 1/2 cup fresh parsley, chopped
  • 1 1/2 cups green onions, finely chopped
  • 1/2 cup curry powder
  • 1/4 teaspoon salt
  • 2 dashes cayenne pepper
  • 2 eggs, separated
  • 2 tablespoons mayonnaise

Instructions:

  1. Lightly grease a 15 x 10-inch jelly-roll pan or baking sheet with an edge.
  2. Line the pan with parchment paper or foil, shiny side up. Coat generously with butter or margarine and lightly flour it.
  3. For the Roulade:
    • In a medium saucepan over medium heat, melt the butter or margarine.
    • Stir in the flour and cook for 1 minute.
    • Add the milk and cook, stirring until the mixture comes to a boil. Simmer for 2 minutes, then remove from heat.
    • Beat the egg yolks, adding a few tablespoons of the hot sauce, then beat the egg yolk mixture into the sauce.
    • Season with salt, nutmeg, and pepper. Pour the mixture into a medium bowl and allow it to cool slightly.
    • Beat the egg whites with cream of tartar until stiff but not dry. Gently fold them into the sauce.
    • Spread the mixture evenly in the prepared pan.
    • Bake in a preheated 375°F oven for 15 to 20 minutes or until golden and the top feels firm.
    • Let it stand for 5 minutes, then invert the roulade onto a clean tea towel. Carefully peel off the paper in strips and allow it to cool completely.
    • Cut the roulade crosswise in half to make 2 rectangles, each 10 inches wide.
  4. For the Filling:
    • In a bowl, combine all filling ingredients until well mixed.
    • Spread the filling evenly over both rectangles of the roulade.
    • Starting with a 10-inch side, roll up both rectangles tightly.
    • Wrap each roll separately with plastic film and refrigerate for at least 1 hour. (These can also be prepared up to 2 days ahead.)
  5. Once chilled, unwrap the rolls and slice them into 1/2-inch slices.
