Ingredients:

  • 1 cup pitted dates
  • 1 1/3 cups hot water
  • 1 cup sugar
  • 2 tablespoons lemon juice
  • 4 cups all-purpose flour
  • 2 teaspoons vanilla extract
  • 1/2 cup shortening
  • 2 cups brown sugar
  • 2 eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Date Filling:

    • In a saucepan, combine the pitted dates, hot water, and sugar.
    • Bring the date mixture to a boil over medium heat, then reduce the heat and let it simmer for about 10 minutes, stirring occasionally, until the dates are completely soft.
    • Stir in the lemon juice, flour, and vanilla extract until well combined. Remove from heat and set aside to cool.
  2. Prepare the Cookie Dough:

    • In a mixing bowl, cream together the shortening, brown sugar, and eggs until light and fluffy.
    • Stir in the vanilla extract.
    • In a separate bowl, sift together the all-purpose flour, baking soda, salt, and cream of tartar.
    • Gradually add the dry ingredients to the creamed mixture, beating until just blended.
  3. Assemble the Cookies:

    • Divide the dough into three equal portions and wrap each portion in waxed paper. Chill in the refrigerator until the dough is easy to handle.
    • Between two sheets of waxed paper, roll out each portion of dough into a rectangle, approximately 12 x 8 inches in size.
    • Remove the top sheet of waxed paper from each rectangle and spread about 2/3 cup of the date filling evenly over the surface of each rectangle.
    • Starting from the 12-inch side, carefully roll up each rectangle of dough jelly-roll fashion, using the waxed paper to help lift and roll the dough.
    • Repeat this process with the remaining portions of dough and filling.
    • Wrap the rolled dough in waxed paper and refrigerate for several hours or overnight to allow the flavors to meld.
  4. Bake the Cookies:

    • Preheat your oven to 350ยฐF (175ยฐC).
    • Unwrap the chilled rolls of dough and slice them into 1/4-inch thick slices.
    • Place the slices about 1 inch apart on greased cookie sheets.
    • Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden.
    • Remove from the oven and transfer the cookies to wire racks to cool completely.
