Ingredients:

  • 150g self-raising flour
  • 3 eggs
  • 150g margarine
  • 150g caster sugar

Instructions:

1. Preheat the oven to gas mark 4, 180ยฐC, 350ยฐF. In a mixing bowl, cream together the caster sugar and margarine until creamy and well combined.
2. Beat the eggs in a separate bowl, then add them one at a time to the sugar and margarine mixture, stirring until the mixture is runny.
3. Optionally, add flavorings of your choice at this stage if desired.
4. Sieve the self-raising flour into the bowl with the wet ingredients, then gently fold everything together until all the flour is fully incorporated, and no lumps remain.
5. Grease two cake tins with margarine, then divide the cake batter equally between them. Smooth the tops with a spatula.
6. Bake the cakes in the preheated oven for approximately 25 minutes, or until they are golden brown and a skewer inserted into the center comes out clean.
7. Once baked, remove the cakes from the oven and allow them to cool in the tins for 10 minutes.
8. After 10 minutes, carefully remove the cakes from the tins and transfer them to a wire rack to cool completely.
9. Once the cakes are completely cooled, use a serrated knife to carefully slice each cake horizontally in half, creating four equal layers.
10. Spread your favorite jam or filling onto one half of each cake, then gently place the other half on top to create a sandwich.
11. Dust the top of the cake with powdered sugar for a decorative finish if desired.
12. Slice the cake into portions and serve with a cup of tea or coffee for a classic British treat. Enjoy!
