A parcel, wrapped in anticipation, arrived from www.poetry.com, bearing an anthology titled “Across the Abyss,” a treasure trove of 301 pages adorned with amateur poetry, among which lay a piece of my own creation! To commemorate this milestone, I crafted a culinary delight – Gajar Ka Halwa – and shared it with my beloved parents and brother. They reveled in its richness, for this sweet confection holds a special place, often savored during winter months and cherished on auspicious celebrations. Ingredients:

  • 3/4 cup ghee
  • 1 large carrot, grated
  • 1 1/2 cups evaporated milk
  • 2 cups sugar
  • 100ml water
  • 15 strands saffron
  • 1/4 teaspoon cardamom powder
  • 1 cup khoya (grated)
  • 1/2 cup almonds, sliced
  • Silver foil for garnish

Recipe Instructions:

  1. Grate khoya and set it aside for later use.

  2. In a large heavy-based pan, combine grated carrots and evaporated milk.

  3. Bring the mixture to a boil over medium heat.

  4. Once boiling, reduce the heat and let the carrots simmer in the milk, stirring constantly, until all the milk has evaporated.

  5. Pour ghee into the pan with the carrots.

  6. Add the grated khoya to the pan and sautรฉ for a few minutes until it melds with the carrots.

  7. Sprinkle sugar over the mixture and continue to cook, stirring continuously, until the carrot mixture thickens and dries up.

  8. Remove the pan from heat while the mixture is still moist.

  9. Stir in the saffron, cardamom powder, and sliced almonds, reserving some almonds for garnish along with silver foil.

  10. Just before serving, reheat the carrot halwa with a splash of milk to bring out its flavors.

  11. If not serving immediately, refrigerate the carrot halwa and reheat it whenever desired.

  12. Handy Hint: If khoya is not available, you can prepare a substitute by mixing 1 cup of whole milk powder with 1 teaspoon of ghee and 1-2 tablespoons of water until it forms a dough-like consistency. This yields approximately 100gms of khoya.
