Instructions:

  1. Begin by preheating your oven to 350 degrees Fahrenheit (175 degrees Celsius) and lightly greasing a baking sheet.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs to the creamed mixture one at a time, beating well after each addition.
  4. Gradually add the flour, baking powder, and vanilla extract, mixing until well combined.
  5. Stir in the white raisins, walnuts, and maraschino cherries until evenly distributed throughout the dough. Note that the dough will be sticky.
  6. On the prepared baking sheet, use a spoon to divide the dough into three long loaves. Use the back of the spoon to smooth and flatten the loaves slightly.
  7. Sprinkle the tops of the loaves with sugar for a sweet, crunchy finish.
  8. Bake in the preheated oven for approximately 35 minutes, or until lightly browned and a toothpick inserted into the center comes out clean.
  9. Once baked, allow the loaves to cool on the baking sheet.
  10. Once cooled, use a sharp knife to cut the loaves diagonally into slices.
  11. For Mandelbread, leave the slices as is. For Biscotti, arrange the slices cut side down on the baking sheet and return them to the oven for an additional 5 minutes per side, or until they are lightly browned and crispy.
  12. Once fully baked and crispy, remove the biscotti from the oven and allow them to cool completely before serving or storing in an airtight container.

Enjoy these Mandelbread/Biscotti with a cup of coffee or tea for a delightful treat that’s perfect any time of day! Experiment with different flavors and additions to create your own signature version of this classic recipe.
