Instructions:
- Begin by preheating your oven to 350 degrees Fahrenheit (175 degrees Celsius) and lightly greasing a baking sheet.
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs to the creamed mixture one at a time, beating well after each addition.
- Gradually add the flour, baking powder, and vanilla extract, mixing until well combined.
- Stir in the white raisins, walnuts, and maraschino cherries until evenly distributed throughout the dough. Note that the dough will be sticky.
- On the prepared baking sheet, use a spoon to divide the dough into three long loaves. Use the back of the spoon to smooth and flatten the loaves slightly.
- Sprinkle the tops of the loaves with sugar for a sweet, crunchy finish.
- Bake in the preheated oven for approximately 35 minutes, or until lightly browned and a toothpick inserted into the center comes out clean.
- Once baked, allow the loaves to cool on the baking sheet.
- Once cooled, use a sharp knife to cut the loaves diagonally into slices.
- For Mandelbread, leave the slices as is. For Biscotti, arrange the slices cut side down on the baking sheet and return them to the oven for an additional 5 minutes per side, or until they are lightly browned and crispy.
- Once fully baked and crispy, remove the biscotti from the oven and allow them to cool completely before serving or storing in an airtight container.
Enjoy these Mandelbread/Biscotti with a cup of coffee or tea for a delightful treat that’s perfect any time of day! Experiment with different flavors and additions to create your own signature version of this classic recipe.
