Ingredients:

  • 1 Eggplant
  • 1 Green Pepper
  • 1/2 Garlic Clove
  • Salt (to taste)
  • 1 tbsp Tomato Paste
  • 1/2 – 1 tbsp Butter
  • 2 tbsp Vinegar

Instructions:

Step Description
1 Peel and crush the garlic cloves.
2 In a large pot, melt the butter over medium heat. Add the crushed garlic and sautรฉ until golden and fragrant.
3 Stir in the tomato paste, then add the vinegar. Mix well until combined with the garlic and butter.
4 Reduce the heat to low and let the mixture simmer gently for about 15 minutes, stirring occasionally to prevent burning.
5 Meanwhile, wash the eggplant and green pepper thoroughly. Peel the eggplant and cut it into circular slices.
6 If the eggplant slices are large, cut them in half. Slice the green pepper, discarding the seeds.
7 Rinse the eggplant and pepper slices once again, then sprinkle them with salt.
8 Preheat oil in a frying pan to 350ยฐF (180ยฐC).
9 Fry the eggplant slices until golden brown on both sides. Repeat the process for the green pepper slices until they are soft.
10 Once cooked, add the eggplant and green pepper to the tomato mixture in the pot. Cover and let the flavors meld together.
