Mary’s Biscuits

Description:
These biscuits are a “must” to go along with My Dad’s Favorite Chicken & Noodles. They are also good with butter & jam, or honey, or any other topping of your choice!

Ingredients:

Quantity Ingredient
4 cups flour
2 tbsp baking powder
4 tsp sugar
1 tsp cream of tartar
1/2 tsp salt
1 cup shortening
1 1/3 cups milk

Instructions:

  1. Combine dry ingredients: In a large bowl, combine flour, baking powder, sugar, cream of tartar, and salt.

  2. Cut in shortening: Using a pastry blender, cut in the shortening until the mixture resembles coarse crumbs.

  3. Chill the dough: Cover the bowl and refrigerate for about 30 minutes. This step can be skipped, but it makes the dough easier to handle if it’s cold.

  4. Add milk: Make a well in the center of the dry mixture and add the milk all at once. Stir just until the dough clings together.

  5. Preheat oven: Preheat your oven to 450°F (230°C).

  6. Knead the dough: On a lightly floured surface, gently knead the dough 10-12 strokes. Be careful not to over-knead or handle the dough too much, as it will become tough.

  7. Roll or pat the dough: Roll or pat the dough to 1/2 inch thickness.

  8. Cut the biscuits: Using a floured 2 1/2 inch biscuit cutter, cut the dough straight down to the board. Twist and lift the cutter, dipping it into flour after each cut.

  9. Transfer to baking sheet: Transfer the biscuits to an ungreased baking sheet. Place them so they’re almost touching each other.

  10. Make an indentation: Lightly press two fingers into the top of each biscuit.

  11. Bake: Bake the biscuits for 10-12 minutes or until golden brown.

  12. Cool: Remove the biscuits from the oven and transfer them to a wire rack to cool completely.

  13. Note: Placing the biscuits close together on the baking sheet helps them to rise as they “climb” on each other. Also, pressing your fingers into the center of each biscuit keeps the middles from rising higher than the sides.
