Description

Indulge in the wholesome goodness of this Flax Seed Bread recipe, packed with fiber-rich flax seeds and whole grains. Perfect for any occasion, whether it’s a cozy weeknight dinner or a potluck gathering with friends and family.

Ingredients

  • 1 1/4 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 cup warm water
  • 1 packet (2 1/4 teaspoons) dry yeast
  • 1/2 cup flax seed (plus extra for topping)
  • 2 tablespoons whole flax seeds
  • 3 tablespoons honey
  • 2 tablespoons molasses
  • 3/4 teaspoon salt
  • 3 tablespoons bread flour (plus extra for kneading)
  • 1 tablespoon cornmeal (for sprinkling)
  • 1 egg white (for brushing)

Instructions

  1. Proof the Yeast: In a bowl, add the dry yeast to warm water and let it sit for about 5 minutes, until it becomes foamy.

  2. Combine Flours: Stir in the all-purpose flour with the yeast mixture until well combined. Cover and let it stand at room temperature for 1 hour to allow the dough to rise.

  3. Grind Flax Seeds: Take 1/2 cup of flax seeds and grind them in a spice or coffee grinder until finely ground, measuring 3/4 cup after grinding.

  4. Mix Dough: Add the ground flax seeds, whole-wheat flour, 2 tablespoons of whole flax seeds, honey, molasses, salt, and 3 tablespoons of bread flour to the yeast mixture. Stir until a soft and slightly tacky dough forms.

  5. Knead Dough: Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic. Add more bread flour, 1 tablespoon at a time, if needed to prevent sticking.

  6. Shape the Loaf: Shape the dough into a 5-inch round loaf and place it onto a baking sheet coated with cooking spray and sprinkled with cornmeal.

  7. Brush and Sprinkle: Brush the loaf with egg white and sprinkle the top with 1 teaspoon of flax seeds.

  8. Make Cuts: Using a sharp knife, make 3 diagonal cuts about 1/4 inch deep across the top of the loaf.

  9. Let it Rise: Cover the loaf and let it rise in a warm place for about 1 hour or until it doubles in size. To test if it’s risen enough, press two fingers into the dough, and if the indentation remains, it’s ready.

  10. Preheat Oven: Preheat the oven to 375Β°F (190Β°C).

  11. Bake: Bake the bread at 375Β°F (190Β°C) for 30 minutes or until it sounds hollow when tapped on the bottom.

  12. Cool: Remove the bread from the pan and cool it on a wire rack before slicing and serving.
