Ingredients:
- 1 chicken breast, diced
- 7 cloves shallots
- 4 cloves garlic
- 10 red chilies
- 5 bird’s eye chilies (adjust to taste)
- 1 stalk spring onion
- 2 pandan leaves
- 1 packet seasoned flour (as needed)
- 2 tbsp all-purpose flour (dissolved in water with a pinch of salt)
- Salt, to taste
- Ground pepper, to taste
- Chicken stock powder, to taste
Instructions:

Prepare the chicken breast by filleting and dicing it into small cubes. Marinate with a bit of lime juice and salt to remove any unwanted odor.

Finely chop shallots, garlic, and red chilies. Cut pandan leaves and spring onion into medium-sized pieces, not too small.

Dip the chicken cubes into the seasoned flour mixture (prepared by mixing all-purpose flour with water and salt) and coat them evenly with seasoned flour. Repeat if necessary. Fry until golden brown and cooked through.

In a pan, stir-fry shallots, garlic, and red chilies until fragrant. Add pandan leaves and spring onion, continue to stir-fry until wilted. Season with salt, pepper, and chicken stock powder to taste. Adjust seasoning as needed. Turn off the heat and add the fried chicken. Mix well.
