Ingredients:

  • 3 pieces of Mujaer fish (or any local fish suitable for frying)
  • 1 tablespoon vinegar (preferably Kura Kura brand)
  • A handful of sliced green onions
  • For the Spice Paste:
    • 5 shallots
    • 2 cloves garlic
    • 3 candlenuts
    • 1/2 cm turmeric
    • 6 small chili peppers (adjust to taste)
    • Salt, sugar, and water to taste

Instructions:

  1. Prepare the Fish:

    • Clean the fish thoroughly and pat dry with paper towels. Heat oil in a frying pan over medium heat.
    • Fry the fish until golden brown and cooked through, ensuring not to overcook them. The fish should remain tender and not too dry so that the sauce can penetrate.
  2. Make the Spice Paste:

    • In a blender or food processor, blend together the shallots, garlic, candlenuts, turmeric, and chili peppers until you have a smooth paste.
    • Heat a little oil in a pan over medium heat. Add the spice paste and sauté until fragrant and the oil starts to separate from the paste.
  3. Cook the Sauce:

    • Pour in a small amount of water to thin out the spice paste, then stir in sugar, salt, and vinegar. Adjust the seasoning to taste.
    • Simmer the sauce for a few minutes, allowing the flavors to meld together.
  4. Combine and Finish:

    • Add the fried fish to the pan with the sauce. Gently stir to coat the fish with the spice paste and cook for a few more minutes, letting the flavors infuse the fish.
    • Just before removing from heat, sprinkle the sliced green onions over the top. Give it a final stir.
  5. Serve:
