Ingredients:

Quantity Ingredient
1 Butter
2 Potatoes
2 sprigs Fresh rosemary
1 tsp Dried rosemary
Spinach
1 Egg
10 Gruyere cheese
1/4 cup Chives
1/2 cup Cream
1/2 tsp Salt
1/2 tsp Pepper

Instructions:

  1. Prepare Skillet: Heat oil and 1 tablespoon of butter in a 10-inch skillet over medium heat.

  2. Cook Potatoes: Add potatoes and sauté until brown and tender, approximately 8 to 10 minutes.

  3. Season Potatoes: Sprinkle with rosemary, season with salt and pepper, and then transfer to a bowl, setting them aside.

  4. Prepare Spinach: Wipe out the skillet. Wash and stem the spinach, then place it in a saucepan over medium heat. Cover and steam until the spinach is tender, about 2 minutes.

  5. Drain Spinach: Transfer the cooked spinach to a colander and allow it to cool slightly. Once cooled, squeeze out all excess water and chop the spinach finely.

  6. Mix Ingredients: In a large bowl, stir together the eggs, cream, gruyere cheese, chives, salt, and pepper until well combined. Add the cooked potatoes and spinach to the mixture.

  7. Preheat Broiler: Preheat the broiler to high heat.

  8. Prepare Skillet (Again): Place the skillet over medium-low heat and add the remaining tablespoon of butter. Once melted, add the egg mixture to the skillet.

  9. Cook Frittata: Cook the frittata slowly until the bottom is set, stirring occasionally. This should take approximately 10 minutes. The top may still be slightly liquid at this stage.

  10. Broil: Transfer the skillet to the broiler and cook until the top is just set. Be sure to keep a close eye on it to prevent burning.

  11. Serve: Once cooked, carefully turn the frittata onto a serving platter and cut it into wedges. Serve hot and enjoy the delicious flavors!

This Potato, Spinach & Chive Frittata is a delightful combination of hearty potatoes, nutritious spinach, creamy cheese, and aromatic herbs, all bound together in a fluffy egg mixture. Perfect for any occasion, this dish is sure to become a favorite in your culinary repertoire.
