1 1/2 cups Chicken broth
18 Garlic cloves

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).

  2. Roast Garlic: Cut the tops off the garlic heads, drizzle with olive oil, and cover. Place them in the preheated oven and roast until tender, approximately 45 minutes. Once done, allow them to cool slightly before squeezing the cloves between your fingertips to release them.

  3. Prepare Soup Base: In a saucepan, melt the butter over medium heat. Add chopped onions and thyme sprigs, and cook for about 6 minutes until the onions are translucent and fragrant. Add both the roasted garlic cloves and raw garlic cloves, and continue cooking for an additional 3 minutes.

  4. Simmer: Pour in the chicken broth, cover the saucepan, and allow the mixture to simmer until the garlic is tender, approximately 20 minutes.

  5. Blend: Add three-quarters of the mushrooms to the saucepan and stir. Transfer the mixture to a blender and puree until smooth.

  6. Finish Soup: Return the pureed mixture back to the saucepan. Add cream, the remaining mushrooms, salt, and pepper to taste. Bring the soup to a gentle simmer, stirring occasionally.

  7. Serve: Divide the grated Parmesan cheese among four serving bowls. Squeeze a lemon wedge over each bowl, stir gently, and serve immediately.
