Yield:

Instructions:
-
Prepare Sugar Syrup:
- Prepare sugar syrup of 1-thread consistency. Refer to the features for the syrup-making procedure.
-
Prepare Ghee:
- Take solidified ghee in a large wide bowl.
- Rub the ghee vigorously with one ice cube at a time until it becomes very white.
-
Make Batter:
- Add milk, flour, and 1 cup of water to the ghee.
- Mix well to make a smooth batter.
- Dissolve color in some water and add it to the batter.
- Adjust the consistency by adding more water if necessary. The batter should be fairly thin, easily running off a spoon.
-
Prepare Ghevar:
- Take an aluminum or steel cylindrical container without a lid, with a height of at least 12 inches and a diameter of 5-6 inches.
- Fill it halfway with ghee and heat.
-
Cook Ghevar:
- When the ghee is smoky hot, take a 50 ml glassful of batter.
- Slowly pour it into the center of the hot ghee in one continuous threadlike stream.
- Allow the foam to settle, then pour one more glassful of batter into the hole formed in the center.
- Once the foam settles again, loosen the ghevar with an iron skewer inserted in the hole.
- Carefully lift it at a slant and place it on a wire mesh to drain excess ghee.
-
Syrup Coating:
- Keep hot syrup in a wide flat-bottomed container large enough to fit the ghevar.
- Dip the ghevar in the syrup and then remove it, placing it aside on a mesh to drain off excess syrup.
- Alternatively, pour some syrup evenly over the ghevar while it’s on the mesh placed over a container.
-
Final Touches:
- Let it cool slightly, then top with silver foil.
- Splash a few drops of saffron milk, sprinkle chopped dry fruits, and add a pinch of cardamom powder for extra flavor.
-
Variation:
- You can also top the ghevar with rabri prepared in advance, although this version may not last as long and will be softer in texture.
Enjoy this delicious Indian sweet with your family and friends! 🎉
