Description:
Indulge in the culinary legacy of the old Stouffers Restaurant in Columbus, Ohio, with this award-winning “Best Entree” recipe for Sweet and Sour Roasted Pork Chops. While it demands a bit of your time, the exquisite flavors and tender texture make every minute worthwhile, especially when entertaining special guests.

Instructions:

  1. Begin by preheating your oven to 450 degrees Fahrenheit.
  2. Sprinkle half a teaspoon of salt evenly over the pork chops.
  3. Place the seasoned chops, bone side down, in a baking pan.
  4. Roast the chops, uncovered, in the preheated oven for 20 minutes.
  5. Meanwhile, in a saucepan, combine the sugar, cider vinegar, chopped green pepper, 2 teaspoons of salt, paprika, and 2 cups of water.
  6. Simmer the sauce mixture for about 5 minutes.
  7. In a small bowl, dissolve the cornstarch in half a cup of water, stirring until smooth.
  8. Slowly add the cornstarch mixture to the hot sauce, whisking continuously until smooth.
  9. Continue cooking the sauce until it thickens, which should take approximately 10 to 12 minutes.
  10. Strain the sauce to remove any lumps or solids.
  11. Once the chops have roasted for 20 minutes, remove them from the oven.
  12. Dip each chop into the prepared sauce, ensuring it is well coated, and then return them to the baking pan, this time bone side up.
  13. Reduce the oven temperature to 300 degrees Fahrenheit.
  14. Bake the sauced chops for another 20 minutes.
  15. After 20 minutes, turn the chops over and pour 2 cups of the sauce over them.
  16. Cover the baking pan with foil and return it to the oven for an additional 50 minutes, still at 300 degrees Fahrenheit.
  17. Remove the foil from the pan, baste the chops with the sauce in the pan, and then roast them uncovered for a final 30 to 40 minutes, allowing the flavors to meld and the chops to develop a beautiful golden hue.

Notes:

  • Ensure the pork chops are cooked to an internal temperature of 145 degrees Fahrenheit for safe consumption.
  • Serve these delectable Sweet and Sour Roasted Pork Chops alongside steamed rice or roasted vegetables for a complete and satisfying meal that’s sure to impress even the most discerning palates.
