Ingredients:
- 2 cups semolina (sooji)
- 1 1/2 cups ghee
- 1 can sweetened condensed milk
- 5 cups water
- 15-20 raisins
- 2 tablespoons sliced almonds
- 3-5 saffron strands
- 1 cup water for soaking saffron
- Sliced almonds for decoration
- Edible silver foil (optional)
Instructions:
-
Prepare Ingredients: Soak the saffron strands in 1 cup of water and keep aside. Also, chop the almonds and set them aside along with the raisins.
-
Heat Ghee: In a heavy-bottomed pan, heat the ghee over medium heat until it melts and becomes hot.
-
Fry Almonds and Raisins: Add the chopped almonds and raisins to the hot ghee. Fry them until they turn lightly browned and fragrant. Once done, remove them from the ghee and set them aside for later.
-
Roast Semolina: Into the same pan with the remaining ghee, add the semolina (sooji). Stirring continuously, roast the semolina until it turns lightly golden in color and releases a nutty aroma.
-
Add Saffron Water: Pour in the soaked saffron water (along with the saffron strands) and 4 cups of plain water into the pan with the roasted semolina. Stir continuously to combine all the ingredients.
-
Cook Semolina Mixture: Reduce the heat to low and continue stirring the mixture until all the water is absorbed and the semolina is cooked through. It should have a thick, pudding-like consistency.
-
Incorporate Condensed Milk: Once the semolina is cooked, pour in the sweetened condensed milk. Stir well to combine, allowing the mixture to simmer gently.
-
Add Fried Almonds and Raisins: As the mixture thickens, add the fried almonds and raisins back into the pan. Mix them in evenly, ensuring they are distributed throughout the burfi mixture.
-
Final Touch: Continue cooking the mixture until you notice a little ghee starting to come up on the sides of the pan. This indicates that the burfi is almost ready.
-
Remove from Heat: Once the burfi mixture reaches the desired consistency, remove the pan from the heat.
-
Shape the Burfi: Grease a flat plate with ghee. Spread the hot burfi mixture evenly onto the greased plate. Use a spatula to smooth it out, creating an even layer.
-
Cut into Shapes: Allow the burfi to cool for a few minutes, then use a sharp knife to cut it into squares or diamond shapes while it’s still warm.
-
Decorate: Garnish each piece of burfi with sliced almonds on top for added texture and visual appeal.
-
Optional: For an extra festive touch, you can also decorate the burfi with edible silver foil before cutting it into shapes.
-
Serve and Enjoy: Once cooled and set, serve your homemade Semolina (Sooji Ki) Burfi as a delightful dessert for your special occasion. Enjoy the rich flavors and sweet memories shared with loved ones!
