  • 2 tablespoons cornflour

Instructions:

  1. Prepare the Reform Sauce:

    • Reduce the heat and let it simmer gently for approximately 30 minutes.
  2. Prepare the Lamb Cutlets:

    • Trim the lamb cutlets to remove excess fat, ensuring the bone is cleaned within 1 inch of the meat.
    • In a separate bowl, mix the minced bacon and breadcrumbs.
    • Brush each lamb cutlet with beaten egg, then coat generously with the bacon and breadcrumb mixture.
    • Cover the cutlets and refrigerate until ready to cook.
  3. Finish the Reform Sauce:

    • Blend the cornflour with about 2 tablespoons of water until smooth.
    • Add the cornflour mixture to the simmering sauce, stirring continuously.
    • Allow the sauce to thicken, then remove it from heat.
  4. Cook the Lamb Cutlets:

    • Preheat the grill to medium-high heat.
    • Grill the prepared lamb cutlets for about 4 minutes on each side, or until they are golden brown and cooked to your desired level of doneness.
