Fried Rice with Ham and Peanuts Recipe
Description:
Make sure your rice is cold with this recipe, if it’s warm or hot the grains will stick together. I use leftover Chinese carry-out rice to make this and vary the ingredients according to what I have on hand.

Instructions:

Rub the cooked rice with wet hands so all grains are separated; set aside.

In a small bowl, lightly beat together eggs and salt.

Place a wok over medium heat; when the wok is hot, add 1 tablespoon of oil. Once the oil is hot, add the beaten eggs and cook, stirring occasionally, until soft curds form. Remove from the wok and set aside.

Increase the heat to medium-high and add another tablespoon of oil to the wok. When the oil is hot, add the chopped onion and minced garlic. Stir-fry until the onion is soft and translucent.

Add the diced green bell pepper, sliced mushrooms, cooked ham, and peanuts to the wok. Stir-fry the mixture until heated through, which should take about 2 minutes. Remove from the wok and set aside.

Pour the remaining 2 tablespoons of oil into the wok. Once the oil is hot, add the cooked rice and stir-fry until heated through, about 2 minutes.

Stir in the ham and vegetable mixture, then add the soy sauce. Finally, add the cooked eggs back into the wok.

Gently stir the mixture until the eggs are distributed evenly and in small pieces throughout the fried rice.
