  • 10 slices bacon
  • 3 leeks
  • 1 carrot
  • 1 cup button mushrooms
  • 2 tablespoons butter
  • 1/2 cup flour
  • 4 tablespoons white wine
  • 1 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup fresh parsley, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Zest of 1 lemon
  • 1 cup heavy cream

For the Savory Dough:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon fresh thyme leaves
  • 1 cup unsalted butter, chilled and diced
  • 1/2 cup ice water
  • 1 egg yolk

Instructions:

  1. Rich Stock:

    • In a large pot, combine chicken legs, onions, bay leaf, black peppercorns, cloves, fresh thyme, parsley, and celery.
    • Add water to cover the ingredients and bring to a boil.
    • Reduce heat to a simmer and cook, uncovered, for 1 hour.
    • Strain the stock, discarding solids, and reserve 2 cups. Refrigerate or freeze any remaining stock for later use.
  2. Savory Dough:

    • In a food processor, combine flour, salt, and fresh thyme leaves.
    • Add chilled diced butter and pulse until the mixture resembles coarse meal.
