Ingredients:

  • 4 chicken breasts
  • 2 carrots
  • 1 onion
  • 3 stalks of celery
  • 6 garlic cloves
  • 1 teaspoon black peppercorns
  • 12 cups water
  • 2 additional carrots, chopped
  • 2 additional onions, chopped
  • 2 additional celery stalks, chopped
  • 1/4 cup chopped parsley
  • Cooked rice or noodles (optional)

Instructions:

  1. Preheat and Season: Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and pepper.

  2. Roast Chicken: Place the seasoned chicken breasts along with large chunked vegetables (carrots, onion, celery) in a large Dutch oven. Roast in the preheated oven until the chicken is cooked through, about 35-45 minutes.

  3. Cool and Reserve: Remove the cooked chicken from the pan and allow it to cool. Once cooled, remove the meat from the breasts and set aside.

  4. Prepare Stock: Place the chicken skin and bones back into the Dutch oven. Place the pan back on the stove over medium heat, stirring occasionally until the contents are well browned.

  5. Deglaze Pan: Add a small amount of water to the pan and bring it to a boil, stirring to remove all the brown bits from the bottom of the pan.

  6. Simmer Stock: Add the remaining water and black peppercorns to the pan. Bring to a boil, then reduce the heat to simmer. Cook partially covered for 1 1/2 to 2 hours, skimming as required and adding more water if the level gets too low. You can also add any other herbs you like at this time, such as thyme and basil.

  7. Strain Stock: Remove the Dutch oven from the heat, skim off any fat from the surface, and strain the liquid into a soup pot.

  8. Add Vegetables: Place the soup pot over medium heat and bring the stock to a boil. Add the chopped carrots, onions, celery, and parsley. Lower the heat to maintain a good rolling boil and cook for 15-20 minutes, or until the vegetables are tender and sweet.

  9. Adjust Consistency: Lower the heat to simmer and adjust the water to suit your taste. Add more if you prefer a weaker broth. If desired, you can also add some frozen vegetables at this time, such as corn and lima beans.

  10. Add Chicken and Season: While the vegetables are boiling, chop the reserved chicken. Add the chicken to the pot and stir gently. Be careful not to add the chicken too early, or it will become shredded. Adjust the seasoning according to your taste.

  11. Serve: Place noodles or rice in the bottom of each soup bowl. Ladle a generous amount of soup over the noodles or rice. Avoid adding rice or pasta directly to the main soup pot to prevent overcooking.
