Peel the pumpkin or squash, remove the seeds and any fibrous bits, and then cut into bite-sized pieces.

In a large bowl, heat the olive oil and fry the onion for 3-4 minutes until translucent.

Stir in the ground cinnamon and, if using ground ginger, add it in too. If using fresh ginger, it will be added later.

Cook for a couple more minutes, then add in the chicken breasts. Fry until the chicken is lightly browned on all sides.

Add the chopped tomatoes and brown sugar to the pan. Season to taste with salt and pepper if desired.

Add the chickpeas and pumpkin to the pan, ensuring they are evenly mixed with the other ingredients.

Cover the pan and simmer for about 30 minutes or until the pumpkin is tender. If using fresh ginger, add it in about halfway through this process.
