Recipe Instructions:
- 
Peel the pumpkin or squash, remove the seeds and any fibrous bits, and then cut into bite-sized pieces. 
- 
In a large bowl, heat the olive oil and fry the onion for 3-4 minutes until translucent. 
- 
Stir in the ground cinnamon and, if using ground ginger, add it in too. If using fresh ginger, it will be added later. 
- 
Cook for a couple more minutes, then add in the chicken breasts. Fry until the chicken is lightly browned on all sides. 
- 
Add the chopped tomatoes and brown sugar to the pan. Season to taste with salt and pepper if desired. 
- 
Add the chickpeas and pumpkin to the pan, ensuring they are evenly mixed with the other ingredients. 
- 
Cover the pan and simmer for about 30 minutes or until the pumpkin is tender. If using fresh ginger, add it in about halfway through this process. 
- 
If you prefer a thicker stew, mix the cornstarch with water to create a slurry. Stir the slurry into the stew and let it simmer for a couple of minutes to thicken. 
- 
Just before serving, stir in the chopped fresh coriander for a burst of flavor.
