Ingredients:

Quantity Ingredient
2 Eggs
1 Cup sugar
2 Cups buttermilk
1/2 Cup fresh pumpkin puree
1 Can canned pumpkin
4 Cups flour
2 Teaspoons salt
4 Teaspoons baking powder
1/2 Teaspoon baking soda
1 Teaspoon nutmeg
1/2 Teaspoon cinnamon
1/4 Teaspoon ground ginger
NA Powdered sugar

Instructions:

  1. In a large bowl, beat eggs and sugar until light and fluffy.
  2. Add oil, pumpkin, and buttermilk.
  3. Mix dry ingredients together and add to egg mixture.
  4. Chill for 1 hour.
  5. Turn out on floured board and roll to 1/2-inch thickness.
  6. Use a donut cutter to cut donuts.
  7. Deep fry at 375°F until brown on one side.
  8. Turn over and brown the other side.
  9. Drain well on paper towels and roll in sugar.
