Description: Don’t let hesitation stop you from trying this delightful sweet potato pie! If you’re a fan of pumpkin pie, you’re in for a treat because this pie boasts similar flavors. I often persuade skeptics by asking a simple question: “Which do you prefer, squash or mashed potatoes?” It’s a persuasive tactic that works like a charm.

Ingredients:

1 1/2 Sweet potatoes
1 Stick of butter
1 Cup of sugar
1 1/2 Cups evaporated milk
1 Teaspoon ground nutmeg
1/2 – 1 Teaspoon vanilla extract

Instructions:

  1. Prepare Sweet Potatoes: Begin by piercing the sweet potatoes with a fork and microwaving them for 8 to 10 minutes until they are tender. Alternatively, you can bake them in a preheated oven at 375°F for approximately 45 minutes. Once cooked, allow them to cool.

  2. Prepare Pastry Shell: While the sweet potatoes are cooling, partially bake the pastry shell in a preheated oven at 450°F for 5 minutes. Then, cool it slightly on a wire rack.

  3. Preheat Oven: Reduce the oven temperature to 375°F.

  4. Peel and Blend: Peel the cooked sweet potatoes and place them in a food processor. Add in the butter, sugar, evaporated milk, ground nutmeg, vanilla extract, salt, ground cloves, and eggs. Process the ingredients until you achieve a smooth mixture.

  5. Assemble Pie: Pour 3/4 of the sweet potato mixture into the partially baked pastry shell. To prevent excessive browning, cover the edges of the pastry with foil strips.

  6. Bake: Place the pie on the oven rack and spoon the remaining sweet potato mixture on top. Bake at 375°F for 25 minutes. After this time, remove the foil strips from the edges and continue baking for an additional 20 to 25 minutes, or until a knife inserted near the center comes out clean.

  7. Cool and Serve: Allow the pie to cool on a wire rack before covering and chilling it in the refrigerator. Serve chilled slices with a dollop of whipped cream for an irresistible treat.

This classic sweet potato pie is perfect for any occasion, whether it’s a cozy winter evening or a festive holiday gathering. Enjoy the rich, comforting flavors that will surely win over even the most skeptical taste buds!
