My Own Mixed Veggie Soup 🥕🍲

Description: At home, we are all down with cold. On the path of recovery, now though:) 2 days back when mom asked me to make carrot and leek soup, I walked into the kitchen with a running nose and after making this soup and drinking a bowlful in the kitchen, when I walked out, I felt I could breathe much better and I felt much stronger. I feel so happy that I made this soup all by myself, on my own, using my mind inspite of a horrid cold:) Try this soup when your down with flu/cold/fever. This will WORK LIKE MAGIC! You will be well in a day or two. Let me know if u try this n how u enjoy it.

Ingredients:

Quantity Ingredient
1 Carrot
1 Leek
3 cups Water
7 cups Water (for stock)
1 Black pepper
2 cubes Vegetable stock

Instructions:

  1. Prepare the Veggies: Start by putting 3 cups of water in a heavy-bottomed vessel.

  2. Add Veggies: Add chopped carrots and leeks into the vessel.

  3. Bring to Boil: Allow the water to come to a boil with the veggies in it.

  4. Make Puree: Once the veggies are tender, carefully transfer them to a blender and make a smooth puree.

  5. Strain the Puree: Strain the puree to remove any fibrous bits, ensuring a silky texture.

  6. Prepare Stock: While preparing the puree, in another vessel, dissolve 2 cubes of vegetable stock in 7 cups of water over medium heat.

  7. Combine Puree and Stock: Pour the prepared vegetable stock into the strained puree.

  8. Season: Add black pepper to taste, adjusting according to your preference.

  9. Add Reserved Water: Pour in 1 cup of the water in which the veggies were boiled. This adds extra flavor to the soup.

  10. Bring to Boil: Allow the soup to come to a gentle boil, ensuring all flavors meld together.

  11. Simmer: Once boiling, reduce the heat to a simmer and let it cook for about 10 minutes.

  12. Serve: Ladle the soup into bowls and serve immediately while hot.
