Instructions

  1. Prepare the Chicken:

    • Clean the chicken thoroughly and cut it into pieces. To reduce any strong odor, rub the chicken with fresh lime juice and rinse well.
  2. Make the Spice Paste:

    • Blend all the spice paste ingredients (garlic, shallots, candlenuts, coriander seeds, turmeric, ginger, and galangal) into a smooth paste. You can use a mortar and pestle or a food processor.
  3. Sauté the Spice Paste:
