Indonesian Yellow Chicken Curry (Opor Ayam Kuning)

Ingredients:

  • 10 chicken wings
  • 6 shallots
  • 5 cloves garlic
  • 1-inch ginger
  • 1-inch galangal, bruised
  • 1/2-inch turmeric
  • 1 teaspoon coriander powder
  • 1/2 teaspoon ground pepper
  • 4 candlenuts
  • 100 ml coconut milk
  • Salt to taste
  • 1 bay leaf
  • 1 lemongrass, bruised
  • Fried shallots for garnish

Instructions:

  1. Prepare the Spice Paste:

    • Grind shallots, garlic, ginger, galangal, turmeric, coriander powder, pepper, and candlenuts into a smooth paste.
  2. Cook the Chicken:

    • Parboil the chicken wings until half-cooked.
  3. Sauté the Spice Paste:

    • In a pan, heat some oil and sauté the spice paste until fragrant.
  4. Cook the Chicken Curry:

    • Add the parboiled chicken wings into the pan with the spice paste. Stir well to coat the chicken evenly.
  5. Add Aromatics:

    • Put in the bay leaf and bruised lemongrass. Add enough water to cover the chicken. Let it simmer until the spices are absorbed into the chicken.
  6. Add Coconut Milk:

    • Pour in the coconut milk, stirring gently to combine. Allow it to simmer until it slightly thickens and the flavors meld together.
  7. Finish and Serve:

    • Once the curry reaches a gentle boil, remove from heat. Serve hot, garnished with fried shallots.
