Irish Vegetarian Colcannon Recipe
Description: There are as many variations of colcannon as there are households in Ireland, usually it has milk in it, with this vegetarian/vegan version the milk is omitted. For a variation, form the colcannon into patties and fry for breakfast. If you eat eggs, crack open eggs into small pockets on top of the colcannon and bake until cooked covered. This is a very satisfying, inexpensive dish to serve.

Instructions:

Boil the Potatoes: Start by boiling the Yukon Gold potatoes until they are tender, which should take around 20-30 minutes.

Save Liquid: Once the potatoes are cooked, remove them from the water, and remember to save 1 cup of the liquid for later use.

Mash Potatoes: Mash the potatoes, adding salt and pepper to taste, and incorporate as much of the saved liquid as needed to make the potatoes fluffy.

Saute Onions and Garlic: While the potatoes are cooking, melt 1 tablespoon of butter (or margarine) in a skillet over medium heat. Saute the onions and garlic until the onions become translucent, which usually takes about 10 minutes.

Cook Cabbage: Add the savoy cabbage and 1/2 cup of water to the skillet with the onions and garlic. Cover and cook until the cabbage is tender.

Prepare Kale: Meanwhile, in another skillet, add 2 cups of water and cook the kale until tender, which should take about 4-5 minutes. Drain the kale well.

Heat Oven: Preheat your oven to 350°F (175°C).

Mix Everything Together: In a large mixing bowl, combine the mashed potatoes, sauteed onions and cabbage, and cooked kale. Season everything well with salt and pepper to taste.

Transfer to Casserole Dish: Transfer the mixture to a casserole dish, spreading it out evenly. Top with the remaining 1/2 tablespoon of butter (or margarine).
