Recipe Instructions:

  1. Preheat oven: Preheat the oven to 300Β°F (150Β°C).

  2. Prepare baking dish: Butter the bottom and sides of a 9x9x2 inch baking dish.

  3. Layer phyllo pastry: Brush one sheet of phyllo pastry with butter, fold it in half horizontally, and gently press it into the baking dish, allowing equal amounts to hang over two sides. Generously brush the excess hanging over the sides with butter.

  4. Continue layering: Repeat the process with the remaining phyllo sheets, buttering each one and layering them until all 8 sheets are used. Roll the excess phyllo under to just cover the edge of the dish, forming an edge to the pastry.

  5. Prepare filling: In a small pan, melt 2 tablespoons of butter over medium heat. Saute the leeks until they are golden, then place them evenly over the bottom of the phyllo shell. Sprinkle the cheese over the leeks.

  6. Prepare custard: In a mixing bowl, whisk together the eggs, milk, half-and-half, nutmeg, kirsch, white pepper, and salt until well blended.

  7. Pour custard over: Pour the custard mixture over the leeks and cheese in the baking dish.

  8. Bake: Bake the pie uncovered for approximately 1 hour, or until the custard is set.

  9. Rest and serve: Let the Lauchkuchen rest for 30 minutes before cutting it into squares and serving.

Enjoy the delightful flavors and rich history of this Phyllo Leek Pie! Serve it hot or cold for any occasion, and savor each bite.
