Description:

This delightful Chicken with White Wine & Garlic recipe is a staple in our entertaining repertoire. While it may seem a tad intricate, fear not! The alcohol content in the wine dissipates during cooking, leaving behind a rich flavor. However, be mindful not to overcook the chicken during the browning process to ensure succulence. The acidity of the lemon juice infuses the chicken while simmering, but if the wine mixture tastes bitter, simply adjust with a touch more lemon juice and salt to suit your palate. Opt for a Chardonnay, though the flavor profile may vary depending on the wine brand. Serve it alongside wild herb and buttered rice for a truly memorable dining experience. Plus, it’s just as delicious the next day!

Ingredients:

  • 6 boneless skinless chicken breasts
  • 1 1/2 cups dry white wine
  • 2 teaspoons dried parsley
  • 2 teaspoons dry basil
  • 2 teaspoons dry oregano
  • 1/2 cup olive oil
  • 1 fresh lemon
  • 1/4 cup butter
  • 2 cloves fresh garlic
  • Salt to taste

Instructions:

  1. Prepare Chicken: Start by removing all fat from the chicken breasts, then wash and lay them out on a flat surface.

  2. Season Chicken: Combine parsley, basil, and oregano, then sprinkle the mixture evenly over one side of the chicken breasts.

  3. Brown Chicken: Heat enough olive oil in a skillet to cover the bottom. Carefully place the seasoned side of the chicken down in the hot oil. Season the top side with the herb mixture. Cook until golden brown, being careful not to overcook. Do not cover the skillet during the browning process. Once done, remove the chicken to a pot large enough to hold all the remaining ingredients.

  4. Prepare Wine Mixture: Add butter to the skillet along with any remaining oil from cooking the chicken. Once hot, add minced garlic and sauté until cooked but not browned. Pour in 1 cup of white wine, stirring to combine. Carefully transfer this mixture into the pot with the chicken breasts.

  5. Simmer Chicken: Pour the remaining wine from the bottle into the pot. Squeeze the juice from the fresh lemon and add it to the pot along with the remaining parsley, basil, and oregano. Season with salt to taste. Cover the pot and simmer until the chicken is thoroughly cooked, ensuring it remains tender and juicy.

  6. Serve: Once the chicken is cooked through, serve hot alongside your favorite sides, such as wild herb and buttered rice.

Enjoy this exquisite Chicken with White Wine & Garlic recipe, perfect for any occasion, whether it’s a special dinner party or a cozy night in with loved ones!
