Ingredients
- 1 1/2 cups brown lentils
- 6 cups cold water
- 1/4 cup olive oil
- 8-10 leaves of swiss chard, shredded
- 1 onion, chopped
- 4 garlic cloves, minced
- 1/4 cup cilantro, chopped
- Lemon juice, to taste
- Lemon wedges, for garnish
- Salt and pepper, to taste

Prepare Lentils: Wash the lentils thoroughly and place them in a large saucepan along with the 6 cups of water.

Cook Lentils: Bring the lentils to a boil, skimming off any foam that forms on the surface. Once boiling, cover the saucepan and reduce the heat to simmer gently for approximately 1 hour or until the lentils are soft. Be sure not to undercook them as they should be tender.

Prepare Vegetables: While the lentils are cooking, heat the olive oil in a separate pan over medium heat. Add the chopped onions and cook them until they become translucent. Stir in the minced garlic and cook for an additional minute. Then, add the shredded swiss chard to the pan and stir-fry until the leaves are wilted.

Combine Ingredients: Once the lentils are cooked, add the cooked onions, garlic, and swiss chard to the pot with the lentils.
