Instructions:

    • In a pressure cooker, combine yellow lentils with 6 cups of water.
    • Pressure cook until the lentils are tender.

    • Heat oil in a pot over medium-high heat.
    • Add mustard seeds, fenugreek seeds, and cumin seeds. Allow them to splutter.
    • Add curry leaves and minced ginger. Stir-fry for 5 minutes until fragrant.

    • Measure out 2/3 cup of tamarind water.

    • In the pressure cooker, mash the cooked lentils until smooth.
    • Add 5 cups of water to the lentils along with the tamarind-tomato mixture.

    • Remove from heat and serve hot with cooked Basmati rice.
