Ingredients:

Quantity Ingredient
375g Beef (cut into thin strips)
1 Egg white
2 tbsp Cornstarch
1 tsp Soy sauce (plus extra for seasoning)
1 tsp Sugar
1 Carrot (julienned)
1/2 Green capsicum (sliced)
1 clove Garlic (minced)
1 inch Ginger (minced)
2 tbsp Oil (for stir-frying)
1 Shallot (sliced)
to taste Chili puree

Instructions:

  1. Prepare Ingredients: Begin by cutting the beef into thin strips. In a bowl, mix together the egg white, cornstarch, 1 teaspoon of soy sauce, and sugar. Allow this mixture to stand for 10 minutes to marinate and tenderize the beef.

  2. Heat Wok: Spray a wok with cooking spray and heat it over medium-high heat until the cooking spray starts to bubble. Then, add oil to the wok, rotating it to ensure the surface is evenly coated with oil.

  3. Stir-fry Beef: Once the wok is hot, add the marinated beef strips and stir-fry for 3-4 minutes or until they turn golden brown and are cooked through.

  4. Add Vegetables: Next, add the julienned carrots, sliced capsicum, minced garlic, and minced ginger to the wok. Stir-fry for an additional minute, allowing the vegetables to become tender-crisp while infusing the dish with their flavors.

  5. Seasoning: Stir in the chili puree, remaining soy sauce, and sliced shallots, cooking and stirring for another 30 seconds to combine all the ingredients and allow the flavors to meld together.

  6. Serve: Transfer the Mandarin Beef to a serving dish and garnish with additional sliced shallots if desired. Serve hot with steamed rice or noodles for a complete meal.
