Ingredients:
| Quantity | Ingredient |
|---|---|
| 375g | Beef (cut into thin strips) |
| 1 | Egg white |
| 2 tbsp | Cornstarch |
| 1 tsp | Soy sauce (plus extra for seasoning) |
| 1 tsp | Sugar |
| 1 | Carrot (julienned) |
| 1/2 | Green capsicum (sliced) |
| 1 clove | Garlic (minced) |
| 1 inch | Ginger (minced) |
| 2 tbsp | Oil (for stir-frying) |
| 1 | Shallot (sliced) |
| to taste | Chili puree |
Instructions:
-
Prepare Ingredients: Begin by cutting the beef into thin strips. In a bowl, mix together the egg white, cornstarch, 1 teaspoon of soy sauce, and sugar. Allow this mixture to stand for 10 minutes to marinate and tenderize the beef.
-
Heat Wok: Spray a wok with cooking spray and heat it over medium-high heat until the cooking spray starts to bubble. Then, add oil to the wok, rotating it to ensure the surface is evenly coated with oil.
-
Stir-fry Beef: Once the wok is hot, add the marinated beef strips and stir-fry for 3-4 minutes or until they turn golden brown and are cooked through.
-
Add Vegetables: Next, add the julienned carrots, sliced capsicum, minced garlic, and minced ginger to the wok. Stir-fry for an additional minute, allowing the vegetables to become tender-crisp while infusing the dish with their flavors.
-
Seasoning: Stir in the chili puree, remaining soy sauce, and sliced shallots, cooking and stirring for another 30 seconds to combine all the ingredients and allow the flavors to meld together.
-
Serve: Transfer the Mandarin Beef to a serving dish and garnish with additional sliced shallots if desired. Serve hot with steamed rice or noodles for a complete meal.
