Ingredients:
- 4 ripe mangoes
- 4 large tomatoes
- 6 shallots
- 1 habanero pepper
- 1-2 black olives
- 1/2 cup fresh cilantro
- 12 tsp oil (divided)

Prepare Ingredients:
- Peel and dice the mangoes into approximately 1/4 inch (1cm) pieces. Set aside.
- Peel the tomatoes, remove the seeds, and roughly chop them. Set aside.
- Mince together the shallots, ginger, and habanero pepper (including seeds). Set aside.

Sauté Aromatics:
- In a large frying pan, heat half of the oil over medium heat.
- Gently sauté the shallots, ginger, and pepper mixture until the shallots are golden brown.

Add Mangoes:
- Once the shallots are golden brown, add the remaining oil to the pan along with the diced mangoes.
- Sauté until the mangoes are warmed through and slightly softened.

Incorporate Remaining Ingredients:
- Blend in the chopped tomatoes, black olives, and fresh cilantro.
- Allow the salsa to simmer gently until the mangoes are soft and all the flavors have melded together.
