Ingredients:

  • 4 beef tenderloin steaks
  • 2 tablespoons olive oil
  • 1/2 cup mushrooms, chopped
  • 3 tablespoons red wine
  • 3 green onions, chopped
  • 1/4 teaspoon dried thyme leaves
  • Salt, to taste
  • Pepper, to taste
  • 6 phyllo pastry sheets
  • Vegetable cooking spray

Instructions:

  1. Preheat oven to 425°F (220°C).

  2. Prepare Mushroom Mixture: In a large skillet, heat olive oil over medium-high heat. Add chopped mushrooms and cook until tender.

  3. Add Flavor: Pour in the red wine and cook for 2-3 minutes until the liquid has evaporated.

  4. Season: Stir in chopped green onions, dried thyme leaves, salt, and pepper. Remove from skillet and let cool thoroughly.

  5. Cook Steaks: Heat the same skillet over medium-high heat. Place the beef tenderloin steaks in the skillet and cook for 3 minutes, turning once. Ensure the steaks are partially cooked; avoid overcooking.

  6. Season Again: Season the steaks with salt and pepper according to taste.

  7. Prepare Phyllo Dough: On a flat surface, layer the phyllo pastry sheets, spraying each layer with vegetable cooking spray.

  8. Cut and Assemble: Cut the stacked layers lengthwise in half and then crosswise to make 4 equal portions. Place about 2 tablespoons of the cooled mushroom mixture in the center of each portion, spreading it to the diameter of each steak. Place a cooked steak on top of the mushroom mixture.

  9. Wrap and Seal: Bring together all four corners of the phyllo dough around the steak and twist tightly to seal. Lightly spray each wrapped steak with cooking spray.

  10. Bake: Place the wrapped steaks on a greased baking sheet and bake in the preheated oven for 9-10 minutes or until golden brown.

  11. Rest and Serve: Allow the Mini-Beef Wellingtons to stand for 5 minutes before serving. Serve immediately and enjoy the elegant flavors!
