Ingredients:
- 5 tablespoons butter
- 18 fresh mushrooms, finely chopped
- 2 onions, finely diced
- 2 tablespoons all-purpose flour
- 1 1/2 teaspoons dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon fresh lemon juice
- 3 sheets frozen puff pastry, thawed
- 1 egg
- 1 tablespoon water
Instructions:
-
Prepare Mushroom Filling:
- Heat butter in a large skillet over medium heat.
- Add chopped mushrooms and diced onions, stirring frequently, and cook for about 13 minutes until the liquid evaporates and the mushrooms are tender.
- Stir in flour, dried thyme, salt, pepper, and fresh lemon juice.
- Cook, stirring, for an additional 2 minutes or until the mixture thickens.
- Allow the mushroom mixture to cool.
-
Assemble Pinwheels:
- On a lightly floured work surface, unfold one sheet of puff pastry.
- Spread 1/3 of the cooled mushroom mixture evenly over the pastry sheet.
- Roll up the pastry sheet tightly to form a log.
- Cover the rolled pastry with plastic wrap and chill in the refrigerator for 1 hour.
- Repeat the process with the remaining two pastry sheets and mushroom mixture.
-
Bake:
- Preheat the oven to 400°F (200°C).
- Remove the chilled pastry logs from the refrigerator and slice them crosswise into ¼-inch thick slices, yielding about 32 slices per roll.
- Place the slices cut side down, 1 inch apart, on ungreased baking sheets.
- In a small bowl, whisk together the egg and water to make an egg wash.
- Brush the top of each slice with the egg wash, ensuring not to let it drip down the sides.
- Bake in the preheated oven for 15 minutes or until the pinwheels are golden brown.
-
Serve:
- Serve the crispy mushroom pinwheels warm and enjoy their irresistible flavors.
Recipe Notes:
- Make-Ahead Option: You can prepare the filled but unbaked pastry rolls ahead of time. Simply refrigerate them for up to a day or freeze them for up to 3 weeks. Thaw in the refrigerator before slicing and baking according to the above instructions.
