Instructions:

  1. Preheat oven to 350°F.

  2. Cut circles out of bread slices with a 2-inch round cutter.

  3. Melt 3 tablespoons of butter in a small saucepan.

  4. Brush both sides of bread circles lightly with butter.

  5. Bake bread circles on an ungreased baking sheet for 5 to 6 minutes per side until golden.

  6. Remove to a wire rack and allow to cool completely.

  7. Increase oven temperature to 425°F.

  8. Melt the remaining 2 tablespoons of butter in a small saucepan.

  9. Stir in flour; cook and stir over medium heat until bubbly.

  10. Whisk in milk; cook and stir for 1 minute or until the sauce thickens and bubbles (the sauce will be very thick). Remove from heat, and add mushrooms to the sauce, 3 tablespoons of cheese, salt, and black pepper, stirring until well blended.

  11. Spread heaping tablespoon of mushroom mixture on top of each toast round; place on an ungreased baking sheet.

  12. Sprinkle the remaining 3 tablespoons of cheese over the canapes, dividing evenly.

  13. Garnish with black and green olive slices, and bell peppers.

  14. Bake for 5-7 minutes until the tops are light brown.
