Madeira Sauce Recipe

Ingredients:

  • 4 tbsp butter
  • 2 tbsp flour
  • 1 onion, finely chopped
  • 1 cup mushrooms, sliced
  • 1 cup beef or vegetable stock
  • 1/4 cup Madeira wine
  • 1/2 tsp salt

Instructions:

  1. Prepare the Roux:

    • In a saucepan, melt half of the butter over medium heat.
    • Gradually whisk in the flour to form a smooth paste, stirring constantly.

  2. Sauté Onion and Mushrooms:

  3. Combine Ingredients:

    • Pour in the beef or vegetable stock into the pan with the onions and mushrooms.
    • Gradually add the prepared roux to the pan, stirring continuously to prevent lumps from forming.
    • Allow the sauce to simmer gently until it starts to thicken, stirring occasionally.
  4. Add Madeira Wine:

    • Once the sauce has thickened to your desired consistency, pour in the Madeira wine.
    • Stir well to incorporate the wine into the sauce.
    • Let the sauce come to a gentle boil and cook for another 2-3 minutes to allow the flavors to meld.
  5. Finish and Serve:

    • Remove the sauce from the heat.
    • Season with salt to taste.
