For Pastry:
- In a large bowl, combine flour and salt.

- Gradually add ice water, 1 tablespoon at a time, stirring lightly until the dough forms.
- Form the dough into a ball and wrap it in waxed paper. Chill until ready to use.
For Filling:
- In a large skillet, melt butter and oil over medium heat.
- Add onion, garlic, and mushrooms. Cook until the onion is soft but not browned.
- Remove from heat and stir in dried thyme.

Assembly:
