Instructions:

  3. Incorporate Flour: Stir in 2 cups of flour into the oat mixture and beat well.
  4. Add Yeast and Eggs: Add the softened yeast and beaten eggs to the mixture, beating well.
  5. Knead Dough: Gradually stir in enough of the remaining flour to make a soft dough. Turn out onto a lightly floured surface and knead until smooth and elastic, about 8-10 minutes.
  6. First Rise: Shape the dough into a ball and place it in a lightly oiled bowl, turning once to grease the surface. Cover and let it rise in a warm place until double in size, approximately 1 hour.
  7. Divide and Rest: Once doubled in size, punch the dough down and turn it out onto a lightly floured surface. Divide the dough in half and cover each half with a bowl. Let it rest for 10 minutes.
