Big Chewy Oatmeal-Raisin Cookies Recipe

🕒 Prep Time: 10 minutes
🕒 Cook Time: 25 minutes
🕒 Total Time: 35 minutes
🍽️ Servings: 16 cookies
🥣 Yield: 16 cookies

Description:

Indulge in the delightful experience of baking and sharing these big chewy oatmeal-raisin cookies. Perfectly sweetened, wonderfully chewy, and packed with wholesome goodness, these cookies are a treat for all occasions.

Ingredients:

Quantity Ingredient
1 cup Unsalted butter
1 cup Light brown sugar
1 cup Granulated sugar
2 Eggs
1 1/2 cups All-purpose flour
1/2 tsp Salt
1/2 tsp Baking powder
1/4 tsp Nutmeg
3 cups Rolled oats
1 1/2 cups Raisins (optional)

Instructions:

  1. Adjust oven racks to low and middle positions.
  2. Preheat the oven to 350°F (175°C).
  3. In a large mixing bowl, beat the butter until creamy.
  4. Add the light brown sugar and granulated sugar to the butter, then beat until fluffy, approximately 3 minutes.
  5. Beat in the eggs, one at a time, until well incorporated.
  6. In a separate bowl, mix together the all-purpose flour, salt, baking powder, and nutmeg.
  7. Gradually stir the flour mixture into the butter-sugar mixture until well combined.
  8. Stir in the rolled oats and optional raisins until evenly distributed throughout the dough.
  9. Form the dough into 16 2-inch balls and place each ball onto one of two parchment paper-covered, large cookie sheets, leaving enough space between each cookie for spreading during baking.
  10. Bake in the preheated oven until the edges of the cookies turn golden brown, typically 22 to 25 minutes.
  11. Once baked, slide the cookies, still on the parchment paper, onto a cooling rack.
  12. Allow the cookies to cool for at least 30 minutes before serving.
  13. Pro Tips:
    • Avoid over-baking; the edges should be golden brown while the rest of the cookie remains light in color.
    • While parchment paper makes for easy cookie removal and cleanup, it’s not mandatory. If you opt not to use parchment paper, allow the cookies to cool directly on the baking sheet for two minutes before transferring them to a cooling rack.

Enjoy the chewy goodness of these oatmeal-raisin cookies with a glass of cold milk or a steaming cup of your favorite hot beverage! Perfect for sharing with loved ones or as a delightful treat for yourself.
