  • 6 onions
  • 1/4 cup butter
  • 1/4 cup margarine
  • 1 onion, minced

Step 1: Prepare Oat Stuffing

  1. Melt butter in a medium skillet over medium heat.
  2. Add minced onion and cook until light brown, stirring frequently.
  3. Stir in oats, salt, ground coriander, pepper, and ground nutmeg.
  4. Cook until oats are golden brown, stirring frequently, approximately 3-4 minutes.

Step 2: Prepare Chicken

  1. Preheat your oven to 375°F (190°C).
  2. Fill the wishbone area of each chicken with the prepared oat stuffing.
  3. Fasten the neck skin to the back of the chicken using a skewer.
  4. Fold the wings across the back, allowing the tips to touch.
  5. Lightly fill the main cavity of each chicken with additional stuffing. Be mindful not to overstuff, as it will expand during cooking.
  6. Skewer or tie the drumsticks to the tail of each chicken.

Step 3: Roast the Chicken

  1. Place the prepared chickens, breast side up, in a shallow roasting pan.
  2. Arrange halved onions around the chickens in the pan.
  3. Brush the chickens and onions with 1/4 cup of melted butter.
  4. Leave the chickens uncovered and roast in the preheated oven at 375°F (190°C).
  5. Baste the chickens several times with the remaining melted butter during the cooking process, approximately 1-1/2 hours or until the internal temperature reaches 165°F (74°C) and the juices run clear.
