Instructions:

  1. Prepare Sauce Velouté:

    • Melt 2 tablespoons of butter in a saucepan.
    • Stir in 1/4 cup of flour, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper.
    • Gradually pour in 2 cups of chicken broth, stirring continuously with a wire whisk.
    • Simmer for 5 minutes, stirring occasionally, until the mixture thickens and becomes smooth.
    • Continue to simmer for an additional 15 minutes, stirring occasionally. Set aside.
  2. Prepare Tomato Sauce:

    • In a separate pan, sauté 3 chopped onions in 1 tablespoon of olive oil for 5 minutes.
    • Stir in 4 chopped tomatoes, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, 1 bay leaf, and 1 teaspoon of thyme.
    • Simmer for 15 minutes, then discard the bay leaf. Set aside.
  3. Preheat Oven:

    • Preheat your oven to 350°F (175°C).
  4. Prepare Casserole:

    • Grease a 3-quart casserole dish with butter.
  5. Cook Chicken:

    • In a skillet, sauté 2 pounds of chicken pieces in 1 tablespoon of butter for 2-3 minutes.
    • Season the chicken with salt and pepper.
  6. Prepare Chicken Mixture:

    • In a bowl, combine 1/2 cup of cream with 1 cup of the prepared Sauce Velouté, Tabasco sauce, and chopped green onions.
    • Stir the mixture into the cooked chicken.
    • Remove from heat.
  7. Prepare Pasta:

    • Melt the remaining tablespoon of butter and toss it with 6 ounces of bow tie pasta.
  8. Assemble the Casserole:

    • Spread half of the cooked pasta evenly in the bottom of the greased casserole dish.
    • Cover the pasta with half of the prepared tomato sauce.
    • Repeat the layers.
    • Top with 1/2 cup of grated Parmesan cheese, then spread the entire chicken mixture over the top.
  9. Final Touch:

    • Blend the remaining 1 cup of Sauce Velouté with the remaining 1 cup of cream.
    • Spoon this mixture over the chicken.
    • Sprinkle the remaining Parmesan cheese on top.
  10. Bake:

    • Bake the casserole in the preheated oven for 45 minutes, or until it’s bubbly and golden brown.
  11. Serve and Enjoy!

    • Once baked, let the casserole cool slightly before serving.
