Description: My absolute favorite chicken dish. I have put together bits and pieces of other chicken French recipes and this is the result. Almost failproof, comes out good every time.

Ingredients:

  • 1 boneless skinless chicken breast
  • 2 eggs
  • 1/4 cup parmesan cheese
  • 1 tablespoon fresh parsley
  • 1/2 cup flour
  • 1/4 cup olive oil
  • 2 tablespoons butter
  • 1-2 minced garlic cloves
  • 1 cup chicken broth
  • 1/2 cup white wine
  • 1 tablespoon lemon juice

Instructions:

  1. Prepare Egg Mixture:

    • Mix together eggs, cheese, and parsley in a shallow bowl.
  2. Prepare Chicken:

    • Place the chicken breast between two sheets of plastic wrap.
    • Pound the chicken thin using a meat mallet or rolling pin.
