These potato-stuffed baked onions can be prepped a day ahead, then simply heated in the oven before serving. Leftover mashed potatoes? No worries! Pop them into a casserole dish, store in the fridge for up to 10 days, then reheat whenever you need a cozy side. This recipe offers flexibility in quantities, allowing you to make as few or as many onions as desired. Whether you opt for dinner-sized onions or petite appetizer versions, the prep time and yield will adjust accordingly.

Ingredients:

  • Potatoes 🥔
  • Cream Cheese 🧀
  • Sour Cream 🥛
  • Butter 🧈
  • Milk 🥛
  • Salt 🧂
  • White Pepper 🌿
  • Grated Parmesan Cheese 🧀

Instructions:

Step Description
1 Clean the onions. Using a knife, carefully cut a 1/16th-inch deep “X” in the bottom of each onion.
2 Parboil the onions in salted water for about 10 minutes.
3 Allow the parboiled onions to cool. Once cooled, cut off the bottoms of the onions. Then, using the bottom as a guide, punch through the center of each onion from the top, leaving 2 or 3 outer layers intact. Set the prepared onions aside.
4 Boil the potatoes until they are tender and fully cooked.
5 Mash the boiled potatoes until smooth. Add in the sour cream and cream cheese, continuing to mash until well combined.
6 Gradually add the butter and milk to the mashed potato mixture, continuing to mash until the desired consistency is achieved.
7 Season the mashed potatoes with salt and white pepper to taste. Allow the mixture to cool until it is just warm to the touch.
8 Preheat your oven to 375°F (190°C).
9 Using a pastry bag or spoon, stuff each prepared onion with the mashed potato mixture.
10 Place the stuffed onions in a baking pan with at least a 2-inch depth.
11 Brush the tops of the stuffed onions with melted butter.
12 Sprinkle grated Parmesan cheese generously over the top of each onion.
13 Bake the stuffed onions in the preheated oven for approximately 20 minutes, or until the cheese is lightly browned and the potatoes are heated through.
14 Serve these delicious potato-stuffed baked onions as a fantastic side dish alongside your favorite roasts, BBQ meals, or as a standout at brunch gatherings!
