Instructions:

  1. In a medium-sized bowl, combine the salmon (flaked), potatoes (mashed), cream, onions (finely chopped), peppers, parsley (chopped), and chives (chopped).

  2. Season the mixture with salt and pepper to taste, ensuring all ingredients are evenly incorporated.

  3. Shape the mixture into four cakes, ensuring they are compact and hold their shape well.

  4. Coat each cake generously with grated Parmesan cheese, ensuring an even coating on all sides.

  5. Dip each cake into beaten eggs, allowing any excess to run off, then coat evenly with breadcrumbs, pressing gently to adhere.

  6. In a non-stick pan, heat the butter over medium heat until melted and sizzling.

  7. Carefully place the fish cakes into the pan, cooking for about 2 minutes on each side, or until golden brown and crispy.

  8. Once cooked through and golden on both sides, remove the fish cakes from the pan and place them on a plate lined with paper towels to drain any excess oil.

  9. Serve hot, accompanied by a bed of couscous salad or your favorite side dish.
