Peach Pastry Pockets

Ingredients:

Donut peaches (or regular peaches) 480g
Dark chocolate 60g
Brown sugar 15g
Egg 1
Fior di latte ice cream to taste

Instructions:

  1. Prepare the Peaches: Start by washing and thoroughly drying the peaches. Cut them in half, ensuring the peaches remain intact and the pits are removed.

  2. Prepare the Chocolate: Chop the dark chocolate into rough cubes and set aside.

  3. Roll the Puff Pastry: Unroll a sheet of puff pastry onto a piece of parchment paper. Stretch it out to a diameter of about 32 cm, ensuring itโ€™s even.

  4. Assemble the Peaches: Place half a peach on the pastry, with the cut side facing up. Fill the hollowed-out center of each peach half with the chocolate cubes.

  5. Wrap the Pastry: Lay the peaches in a circular pattern on the pastry, with the cut side facing down. Beat the egg and brush it lightly over the pastry to give it a golden finish.

  6. Prepare the Second Sheet of Pastry: Take another sheet of puff pastry and roll it out on a floured surface. Stretch it until it reaches approximately a 40 cm diameter. Carefully roll the pastry around the rolling pin to transfer it without tearing.

  7. Wrap the Peaches: Gently wrap the second layer of pastry around the peach halves, pressing slightly to ensure the pastry sticks and eliminates any air pockets between the two layers.

  8. Trim and Seal: Using a fluted pastry cutter, trim the excess pastry around the peaches, leaving a decorative edge. Discard the excess pastry.

  9. Final Touches: Arrange the pastries on a baking sheet lined with parchment paper. Brush the surface with the remaining beaten egg and sprinkle with brown sugar for a touch of sweetness and sparkle.

  10. Baking: Bake in a preheated static oven at 200ยฐC (392ยฐF) for about 20 minutes, or until the pastry is golden and crisp.

  11. Serve: Once baked, remove the peach pastry pockets from the oven and let them cool slightly. Serve them warm, paired with a scoop of Fior di Latte ice cream for a delightful treat.
