Assemble the Peaches: Place half a peach on the pastry, with the cut side facing up. Fill the hollowed-out center of each peach half with the chocolate cubes.

Wrap the Pastry: Lay the peaches in a circular pattern on the pastry, with the cut side facing down. Beat the egg and brush it lightly over the pastry to give it a golden finish.

Prepare the Second Sheet of Pastry: Take another sheet of puff pastry and roll it out on a floured surface. Stretch it until it reaches approximately a 40 cm diameter. Carefully roll the pastry around the rolling pin to transfer it without tearing.
